Our Story

The finest produce of South India has a place and a season. We honour both.

Most spice and rice leaving India moves through a chain nobody can see the end of. A grower sells to an agent. The agent sells to a consolidator. The consolidator blends lots from four districts to hit a price, and by the time a sack reaches a port, the question of where it grew has no answer left in it.

That chain works, in its way. It produces cheap, consistent, anonymous product. What it cannot produce is character — and character is the entire reason South Indian ingredients are worth buying in the first place.

Why Madurai

We are based in Madurai because it sits inside the growing belt rather than beside it. Seeraga Samba comes from the Cauvery delta a few hours north. Pepper and cardamom come down from the Western Ghats to the west. Turmeric comes from Erode. Pulses come from the dry districts around us. Being here means we buy standing in the same room as the person who grew the thing.

What we do differently

We buy direct. From mills, from growers, and from registered farmer producer organisations. There is no broker between the field and your kitchen, which means the grower is paid properly and we know exactly what we bought.

We prepare to one standard. Everything is cleaned, graded and moisture-controlled to a single documented specification before it is packed — whether it is going into a 26 kg export sack or a 250 g retail pouch.

We keep the lot code. Every batch carries a code that runs back to the named cluster it came from. If a customer asks where a consignment grew, we can answer with a place, not a state.

We buy in season. We do not carry everything all year. When cardamom is not right, we say so rather than shipping something that will disappoint you.

Importers and distributors building an Indian range. Specialty retailers who want provenance they can print on a shelf card. Restaurant groups who have got tired of a spice supplier whose product changes between deliveries. And private label clients who want to put their own name on something they are not embarrassed by.
